Check out this healthier twist on a classic Easter treat with Dark Chocolate Coconut Bliss Balls. These are easy to make, require mimial ingredients and satisfy those chocolate cravings without the guilt.  They do contain sugar but the impact is reduced somewhat with the added protein from the almond nut butter and the fat from the coconut.  Here’s the recipe:

Dark Chocolate Coconut Bliss Balls

Ingredients

  • 1 cup rolled oats
  • 1/2 cup unsweetened shredded coconut, plus extra for rolling
  • 1/4 cup cocoa powder
  • 1/4 cup almond butter (or any nut or seed butter of your choice)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Dark chocolate chips for coating (optional)

 

Instructions

1. In a food processor, combine the rolled oats, shredded coconut, cocoa powder, almond butter, honey or maple syrup, vanilla extract, and a pinch of salt. Pulse until the mixture comes together and forms a sticky dough.

2. Using your hands, roll the dough into small balls, about 1 inch in diameter.

3. If desired, melt some dark chocolate chips in the microwave or over a double boiler. Dip each bliss ball into the melted chocolate until coated, then place on a baking sheet lined with parchment paper.

4. Sprinkle the coated bliss balls with additional shredded coconut for extra texture and flavor.

5. Place the baking sheet in the refrigerator for at least 30 minutes to allow the chocolate to set.

6. Once set, transfer the bliss balls to an airtight container and store in the refrigerator until ready to serve.
